CHOCOLATE CUPCAKE RECIPE

This chocolate cupcake recipe from Godiva is one that you will definitely keep coming back to everytime you want to bake. For the cupcakes:
  • 120g all-purpose flour
  • 60g unsweetened cocoa powder (use Godiva if available)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 120g of unsalted butter, softened
  • 200g of granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 60g of Godiva chocolate, melted and cooled
  • 177ml of whole milk
For the chocolate ganache:
  • 118ml of heavy cream
  • 120g of Godiva chocolate, finely chopped
How To Make Chocolate Cupcakes
Preheat the oven: Preheat your oven to 175°C. Line a cupcake tin with paper liners.
Sift dry ingredients: In a medium bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
Cream butter and sugar: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
Add eggs and vanilla: Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Incorporate dry ingredients: Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
Add melted Godiva chocolate: Gently fold in the melted and cooled Godiva chocolate until evenly distributed in the batter.
Alternate with milk: Add the flour mixture to the batter in three parts, alternating with the whole milk. Begin and end with the flour mixture, mixing until just combined.
Fill cupcake liners: Spoon the batter into the prepared cupcake liners, filling each about two-thirds full.
Bake: Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the centre comes out clean. Remove from the oven and allow the cupcakes to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
Prepare chocolate ganache: In a small saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and pour over the chopped Godiva chocolate. Let it sit for a minute, then stir until smooth.
Frost cupcakes: Once the cupcakes are completely cooled, dip the tops into the chocolate ganache or drizzle it over the cupcakes for a decadent finish.
